Sounds like you've got a good start to your game! I usually have one harvesting in the beginning with the others researching.
You don't HAVE to put the game on pause overnight- I get the villagers trained in thier jobs and then just run the game on slow overnight. Usually, there are no problems in the morning and there are a lot more tech points!
